Dit product is een amberkleurige olieachtige vloeistof met een relatieve dichtheid van 1,00±0,05, een viscositeit van 0,40～0,60Pa·s (25℃), een vlampunt van 288℃ en een HLB-waarde van 10,0. Het is oplosbaar in minerale olie, maïsolie, dioxaan, Chemicalbook cellulose, methanol, ethanol, ethylacetaat, aniline en tolueen, katoenzaadolie en tetrachloorkoolstof. Het is ook oplosbaar in 5% zwavelzuur, natriumhydroxide, natriumsulfaat en aluminiumchloride, en is gedispergeerd in water en ethyleenglycol.

Het heeft uitstekende emulgerende, dispergerende en bevochtigende eigenschappen. In de voedingsmiddelenindustrie wordt het gebruikt als emulgator, dispergeermiddel en troebelingsmiddel voor ijs, brood, cakes, snoep, enz., en voor verfrissende drankjes. De dosering is 0,1%~0,5% om te voorkomen dat roomvoedsel spat en veroudert, en om de kwaliteit te verbeteren, de glans te verhogen, de smaak te verbeteren en de zachtheid te vergroten. In het bijzonder heeft het een significant anti-bloei-effect op roomchocoladekaramel. Het kan alleen of samen met glycerol esters, sucrose esters en andere voedsel emulgatoren worden gebruikt om synergetische effecten uit te oefenen.
