Propylgallaat (PG) is een synthetische in olie oplosbare antioxidant die veel wordt gebruikt in voedingsmiddelen en cosmetische toepassingen.het remt effectief de lipidenoxidatie door waterstofatomen te doneren om vrije radicalen te neutraliseren, waardoor de houdbaarheid van het product wordt verlengd en de kwaliteit behouden blijft.
Mechanisme van actie
Propylgallaat behoort tot de klasse van fenolische antioxidanten die BHA, BHT en TBHQ omvat.Deze verbindingen onderbreken de ketenreactie van lipide-auto-oxidatie door stabiele structuren te vormen met vrije radicalen, waardoor oxidatieve afbraak in verschillende toepassingen effectief wordt voorkomen.
Toepassingen
• Antioxiderend toevoegingsmiddel voor vetten, oliën en oliehoudende voedingsmiddelen
• conserveringsmiddelen in farmaceutische preparaten
