L-arabinose, ook bekend als arabinose of pectinose, is een pentosesuiker. In de natuur komt L-arabinose zelden voor als monosacharide; het is gewoonlijk gebonden aan andere monosachariden en wordt aangetroffen in de vorm van heteropolysachariden in tandvlees, hemicellulose, pectine, bacteriële polysachariden en bepaalde glycosiden. Het vertoont een hoge stabiliteit tegen hitte en zuur. Als caloriearme zoetstof is L-arabinose goedgekeurd door de Amerikaanse Food and Administration en het Japanse ministerie van Volksgezondheid, Arbeid en Welzijn voor gebruik als additief voor gezonde voeding.
Toepassingen van L-arabinose: (1) Voedings- en gezondheidssupplementen: voedingsmiddelen voor diabetes, voedingsmiddelen voor gewichtsverlies, functionele gezondheidsvoedingsmiddelen en sucrose-additieven; (2) als additief in receptgeneesmiddelen en zelfzorggeneesmiddelen voor gewichtsverlies en bloedglucoseregulatie, of als hulpstof in farmaceutische eindproducten; (3) Een ideaal tussenproduct voor de synthese van smaak- en geurstoffen; (4) Als tussenproduct bij farmaceutische synthese; (5) Organische synthese en chemische reagentia.
