Inleiding:
Saccharine natrium staat ook bekend als saccharine, en de wetenschappelijke naam is natriumzout van o-sulfonylbenzamide. Het is een wit prismatisch kristal. Molecuulgewicht is 205,17. Smeltpunt is 226-231℃. Het is geurloos of licht geurig en smaakt erg zoet en bitter. Het verweert langzaam in de lucht, verliest ongeveer de helft van zijn kristalwater en wordt een wit poeder. De zoetheid van een verdunde waterige oplossing is ongeveer 300-500 keer die van tafelsuiker, en de zoetheidsdrempel is ongeveer 0,00048%. Het is gemakkelijk oplosbaar in water en enigszins oplosbaar in ethanol. De thermische stabiliteit in waterige oplossing is beter dan die van saccharine, en er is geen verandering bij verhitting op 100℃ gedurende 2 uur. De zoetheid van de waterige oplossing neemt geleidelijk af wanneer deze lange tijd wordt bewaard. Het wordt voornamelijk gebruikt als een eetbare zoetstof. Het ontleedt niet in het menselijk lichaam, wordt uitgescheiden in de urine en heeft geen voedingswaarde. Het wordt gemaakt van ftaalzuuranhydride of tolueen als grondstoffen.
