サッカリンナトリウムは、サッカリンとも呼ばれ、その学名はo-スルホニルベンズアミドのナトリウム塩です。白色のプリズム状結晶です。分子量は205.17です。融点は226～231℃です。無臭またはわずかに芳香があり、非常に甘く苦い味がします。空気中でゆっくりと風化し、結晶水の約半分を失い、白色粉末になります。希薄水溶液の甘さは、砂糖の約300～500倍で、甘味閾値は約0.00048％です。水によく溶け、エタノールにわずかに溶けます。水溶液中での熱安定性はサッカリンよりも優れており、100℃で2時間加熱しても変化はありません。水溶液の甘さは、長時間放置すると徐々に低下します。主に食用甘味料として使用されます。人体内で分解されず、尿中に排泄され、栄養価はありません。無水フタル酸またはトルエンを原料として製造されます。
用途:
非栄養性甘味料。食品甘味料および診断薬として使用。
