Een niet-reducerende cyclische suiker samengesteld uit acht α-1,4-gekoppelde D-pyranose-eenheden. Het is een praktisch geurloze, witte of gebroken witte kristallijne vaste stof.
Gebruik:
Gebruik van cyclodextrine in de chemie: Cyclodextrine is een waardevol chemisch reagens. De aanwezigheid ervan verhoogt de fluorescentie-intensiteit van fluorescerende pigmenten aanzienlijk, waardoor het nuttig is bij eiwit- en aminozuuranalyse. Het kan ook worden gebruikt om lange-keten organische verbindingen en racematen te scheiden. Verder kunnen adsorbents gemaakt van cyclodextrine worden gebruikt voor chromatografische analyse.
