Vanillinezuur, met de molecuulformule C8H8O4 en een molecuulgewicht van 168,14, is een wit naaldachtig kristal dat geurloos, sublimeerbaar en niet-afbreekbaar is. Het heeft een smeltpunt van 210°C, is gemakkelijk oplosbaar in ethanol en enigszins oplosbaar in water. Het vertoont geen verkleuring bij reactie met ijzerchloride. Vanillinezuur is een van de actieve componenten van Picrorhiza scrophulariiflora. De structuur van picrolide bevat vanillinezuurgroepen, ferulinezuurgroepen en cinnamoylgroepen, die hydrolyseren tot vanillinezuur, ferulinezuur en kaneelzuur. Vanillinezuur fungeert als een antibacterieel bestanddeel van Picrorhiza scrophulariiflora, en het meten van het vanillinezuurgehalte kan dienen als indicator voor het beoordelen van de kwaliteit van Picrorhiza scrophulariiflora.
