Het bestaat in drie isomeren vormen, d-, l- en dl- en verschijnt als een kleurloze tot lichtgele vloeistof.De smaak van de roquefortkaas is sterk, met een scherpe geur die doet denken aan Roquefortkaas (hoewel deze in lage concentraties een aangenaam fruitachtig aroma heeft) en een scherpe geur.Het is weinig oplosbaar in water en glycerol, maar oplosbaar in ethanol en propyleenglycol.
