Inleiding:
Disodiumdihydrogenpyrophosphate heeft het uiterlijk van een wit monoklinisch kristallijn poeder of gesmolten vaste stof.86Het is oplosbaar in water, maar onoplosbaar in ethanol.Natriumzuurpyrophosfaat is licht hygroscopisch en vormt na absorptie van water zes kristallijne hydraten.Het ontbindt tot natriummetaphosfaat bij verhitting tot boven 220°C.het kan een passende hoeveelheid aluminiumzout en/of calciumzout bevatten om de reactiesnelheid te beheersen.
Gebruik:
Disodiumdihydrogenpyrophosphate kan worden gebruikt als bakpoeder, gebruikt bij het bakken van voedsel, het regelen van de fermentatiesnelheid en het verbeteren van de productieintensiteit; gebruikt in instantnoedels,verkorting van de rehydratatietijd van eindproductenGebruikt in koekjes en gebakjes, kan het de fermentatietijd verkorten, de breukgraad van het product verminderen, de gaten los en netjes maken,en de opslagperiode verlengen.
