Een wit, geurloos, kristallijn poeder met een zoete smaak en hygroscopische eigenschappen, oplosbaar in water (235 g/100 g water bij 25 °C), glycerol en propyleenglycol; licht oplosbaar in methanol,ethanol, azijnzuur, fenoloplossingen, vrijwel onoplosbaar in de meeste andere organische oplosmiddelen.
Het wordt gebruikt als vochtbevorderend middel, smaakbehouder en antioxidant in levensmiddelen en als ingrediënt in cosmetica. Het wordt ook gebruikt bij de vervaardiging van tandpasta, tabak,leer en inkt ter vervanging van glycerine om het vochtgehalte te beperkenHet kan worden gebruikt in biochemisch onderzoek, voor de zuur-basis titratie van boorzuur en voor de bereiding van sorbitol en vitamine C.het dient als biochemisch reagens, verdikkingsmiddel en verhardingsmiddel, en kan ook worden gebruikt voor de productie van weekmakers en antivriesmiddelen in alkydharsen.
