Een witte kristallijne substantie of kristallijn poeder. Het appelzuurmolecuul bevat één chiraal koolstofatoom en bestaat in twee enantiomeren: L-appelzuur en D-appelzuur. De van nature voorkomende vorm is L-appelzuur, dat veel voorkomt in onrijp fruit zoals appels, druiven, kersen, ananassen en tomaten; D-appelzuur kan worden verkregen door scheiding van een racemisch mengsel en wordt uitsluitend gebruikt als laboratoriumchemisch middel.
Toepassingen:

Het verbruik van appelzuur is iets hoger dan dat van itaconzuur, en het is ook een veelgebruikt organisch zuur. In de voedingsindustrie wordt appelzuur gebruikt als verzuringsmiddel in dranken, jam, gelei en fruitwijnen; in de consumentenproductensector wordt het gebruikt om de kwaliteit van tandpasta en cosmetica te verbeteren; in de geneeskunde wordt het gecombineerd met aminozuren om injecteerbare oplossingen te vormen, die dienen als postoperatieve voedingsoplossing en een gunstige behandeling voor patiënten met een abnormale leverfunctie; bovendien wordt het gebruikt als component in verven, detergenten en deodorants binnen de chemische industrie.
