Natriumpolyacrylaat is een wit poeder. Het is geurloos en smaakloos. Het is extreem hygroscopisch. Het is een polymeerverbinding met zowel hydrofiele als hydrofobische groepen.Het lost zich langzaam op in water en vormt een zeer viskeusDe viscositeit van de 0,5%-oplossing is ongeveer Pa•s. De viscositeit is niet te wijten aan wateropname en zwelling (zoals CMC of natriumalginaat),maar eerder door het ionische fenomeen van veel anionische groepen binnen het molecuul, waardoor de moleculaire keten verlengt, wat resulteert in een verhoogde viscositeit en de vorming van een zeer viskeuze oplossing.De viscositeit is ongeveer 15-20 keer die van CMC en natriumalginaatWarmtebehandeling, neutrale zouten en organische zuren hebben weinig effect op de viscositeit, terwijl alkalisiteit de viscositeit verhoogt.Het ontbindt niet als het sterk wordt verhit tot 300 graden CelsiusDe viscositeit verandert zeer weinig tijdens langdurige opslag en het is niet gemakkelijk te bederven.
