Inleiding:
Kleurloze tot witte schilferige kristallen of wit kristallijn poeder. Licht eigenaardige geur en bittere smaak. Smelt en ontleedt bij ongeveer 283℃. De pH-waarde van een 10% waterige oplossing is 5,4Chemicalbook～6,0. Stabiel in warmte, licht en lucht. Kleurt bij verhitting met glucose. Onstabiel in alkalisch milieu. Oplosbaar in water (3g/100ml, 25℃).
Gebruiken:
Voedingssupplement. Een van de essentiële aminozuren. Vrijwel niet-limiterend aminozuur in het eiwit van de meeste voedingsmiddelen. Kan worden toegevoegd aan gebakken voedingsmiddelen. Naast het versterken van fenylalanine, reageert het met koolhydraten om amino-carbonylgroepen te vormen, die de smaak van voedingsmiddelen kunnen verbeteren. Het kan ook worden gebruikt om aminozuurinfusen en uitgebreide aminozuurpreparaten te bereiden.
