Einführung:
Farblose bis weiße, flockige Kristalle oder weißes kristallines Pulver. Leichter, eigentümlicher Geruch und bitterer Geschmack. Schmilzt und zersetzt sich bei etwa 283 °C. Der pH-Wert einer 10%igen wässrigen Lösung beträgt 5,4Chemicalbook～6,0. Stabil unter Hitze, Licht und Luft. Färbt sich beim Erhitzen mit Glukose. Unbeständig in alkalischer Umgebung. Löslich in Wasser (3 g/100 ml, 25 °C).
Verwendungen:
Nahrungsergänzungsmittel. Eine der essentiellen Aminosäuren. Fast nicht limitierende Aminosäure im Protein der meisten Lebensmittel. Kann zu Backwaren hinzugefügt werden. Zusätzlich zur Stärkung von Phenylalanin reagiert es mit Kohlenhydraten unter Bildung von Amino-Carbonyl-Gruppen, wodurch der Geschmack von Lebensmitteln verbessert werden kann. Es kann auch zur Herstellung von Aminosäureinfusionen und umfassenden Aminosäurepräparaten verwendet werden.
