Introduction :
Le maltose monohydraté, de formule chimique C12H22O11·H2O, est une poudre cristalline blanche et appartient aux sucres réducteurs. Il est facilement soluble dans l'eau. La solubilité du maltose monohydraté dans l'eau est de 1080 g/L (20°C). Il a un goût sucré mais plus faible que le saccharose.
Utilisations :
Édulcorant ; agent hygroscopique. Il est principalement utilisé dans les aliments à faible teneur en sucre. Bien que la douceur soit réduite, la concentration reste inchangée, ce qui permet d'inhiber la reproduction des micro-organismes et d'atteindre l'objectif d'une conservation à long terme. Son hygroscopicité peut empêcher la cristallisation des bonbons et peut également améliorer la structure des aliments pour les garder mous pendant longtemps. Il convient également pour sucrer les jus de fruits naturels.
