مونو هیدرات مالتوز، با فرمول شیمیایی C12H22O11·H2O، یک پودر بلوری سفید است و متعلق به قند کاهش دهنده است.محلولیت مونو هیدرات مالتوز در آب 1080 g/L (20°C) استطعم شیرین داره اما از ساکاروز ضعیف تره.
استفاده:
شیرین کننده؛ عامل هیگروسکوپی. بیشتر در غذاهای کم شیرین استفاده می شود. اگرچه شیرین بودن کاهش می یابد، غلظت آن تغییر نمی کند.بنابراین می تواند تولید مثل میکروارگانیسم ها را مهار کند و هدف حفظ طولانی مدت را به دست آوردهیگروسکوپیکیت آن می تواند از کریستالیزه شدن آب نبات جلوگیری کند و همچنین می تواند ساختار غذا را بهبود بخشد تا آن را برای مدت طولانی نرم نگه دارد. همچنین برای شیرین کردن آب میوه های طبیعی مناسب است.
